After a cheese-making day with friends I found myself with a few cheeses and a lot of whey!

I set myself the challenge of using both cheese and whey in one meal. First I made Turkish bread or pide. I used an SBS recipe but replaced the warm water and milk with warm whey. While I was heating the oven for the bread, I roasted a tray of zuchini (courgette) pieces, chunks of tomato and sliced red onion seasoned with sumac, dried mint and salt and pepper then drizzled with a good olive oil.

With the bread and vegetables I served my freshly made and marinated cheese made in the style of Chabichou or Persian feta. For the marinade I used bay leaf, peppercorns, sumac and garlic.
