This pie has the consistency of a baked cheesecake and resembles a Greek feta pie which is normally cut into squares or diamonds to serve. Delicious with a fresh salad.

Preheat the oven to 180C (350F) and oil a round cake tin or baking pan with olive oil. Into a food processor put 300g (8 oz) of feta cheese, ½ a cup of ricotta cheese, ½ a cup of sour ceam, 100g (3½ oz) softened butter, 4 eggs and 2 tablespoons of good olive oil (or the oil from a marinated feta) and process until quite smooth. Add 1 cup of plain flour and 2 tablespoons of baking powder and continue to process until smooth. Pour into the prepared dish and bake for approximately 40 minutes until golden brown and set.
