Preheat your oven to 180ºC (360ºF). Peel and dice 2 apples and place them in a small saucepan with the zest and juice of ½ a lemon and a pinch each of nutmeg and cinnamon. Add a tablespoon of water and stew until the apples are soft. Meanwhile, cut 6 plums into similar sized pieces and add them to the apples for 2-3 minutes then remove the fruit from the saucepan into a baking dish. In a bowl combine 1 cup of sour cream with 1 large egg, ½ a cup of sugar, 1 teaspoon of vanilla essence, 2 tablespoons of flour and ¼ of a teaspoon of baking powder. Mix well until smooth and pour over the top of the fruit. Bake for 35 minutes. Next mix 2 tablespoons of brown sugar, 1 teaspoon of cinnamon and 2 teaspoons of butter until thoroughly combined. Remove the pudding from the oven and dot with the brown sugar mixture. Return to the oven for 15 minutes or until the topping is brown. Serve hot.
