Oloroso cake

Oloroso (Spanish for sweet-smelling) is a style of sherry. This sherry is fortified early which suppresses the flor yeast and exposes the wine to air through the wooden casks it matures in. As it ages (some are aged for decades) the alcohol level rises and the sherry becomes dark and nutty in flavour. This is a simple cake (packet mixes make it super easy) and the flavour of Oloroso shines through.

Preheat your oven to 180ºC (350ºF). In a bowl combine 1 packet of vanilla cake mix, 1 packet of vanilla instant pudding mix, 4 eggs, 1 teaspoon of ground cinnamon and ⅔ of a cup each of salad oil and Oloroso sherry. Beat until smooth then pour into a prepared bundt tin or ring tin and bake for 45 -50 minutes. Serve at room temperature with cream or sour cream and more sherry!
