Here’s an apple cake with a crusty exterior and delicious apple filling. Thomas used this recipe.

Preheat your oven to 180ºC (350ºF) and grease an 18cm (7″) cake tin. Melt 125g (4.4 0z) of butter in a large saucepan, then add 90g (3 oz) of sugar and stir to dissolve. Add 1 cup of self-raising flour, mixing well, then beat in 1 egg. Using your fingers evenly spread a little more than half of the cake mixture on the bottom of the prepared tin. Peel and thinly slice 3 cooking apples and spread half of the slices in layers onto the cake mix. In a small bowl mix 2 tablespoons of sultanas, 1 tablespoon of raw sugar, ½ a teaspoon of ground cinnamon and ¼ of a teaspoon of ground nutmeg. Sprinkle this mixture over the apple. Now cover with the remaining apple slices and sprinkle with the juice of 1 lemon. Spread the remaining cake mixture evenly over the top. Bake for 45 minutes or until a skewer into the centre of the cake comes out clean. Serve with vanilla ice cream.
