smoked salmon and eggs

This is a great combination at any time of day. Try scrambled eggs with smoked salmon for breakfast,

or an omelette filled with smoked salmon and Camembert for lunch.

A frittata of smoked salmon, potato and fennel is a simple and delicious meal. Boil or steam potatoes, then peel and slice them and set aside in a bowl. In a fry pan heat some oil and butter and saute onion and fennel slices until wilted. Add these to the potatoes and season with freshly ground black pepper. Lightly beat 4-6 eggs with ½ a cup of milk and 1-2 tablespoons of sour cream. Pour this into the potato mixture along with pieces of smoked salmon and stir to combine, taking care not to break the potatoes. Pour into a greased oven dish and bake in a moderate oven until the eggs are set. Serve with a fresh green salad.

Here’s yet another delicious idea for smoked salmon. To make these Ukrainian-style potato pancakes, peel and grate 6 potatoes, rinse them in cold water and then squeeze them in a clean tea-towel to remove as much moisture as possible. Allow the potatoes to dry out in a colander while preparing the rest of the ingredients. Finely dice 1 onion and place in a bowl with 2 eggs, Â˝ a cup of flour, ÂĽ of a cup of milk, ÂĽ teaspoon of baking powder and salt and freshly ground black pepper to taste. Now add the potatoes and mix thoroughly. In a heavy fry-pan heat  a generous amount of vegetable oil over medium-high heat. Drop the mixture into the hot oil by the tablespoonful, flattening each one with a spatula. Fry until golden brown then drain on paper towels. You can keep them hot in a 100C (200F) oven until ready to serve with smoked salmon and sour cream, either plain or with diced capers and gherkins added.
