apple cake

This apple cake, from a Stephanie Alexander recipe, is moist and full of apple chunks. Serve it with fresh cream or a good vanilla ice cream and watch it disappear!

Peel and chop 2 cups of eating apples and soak them for 30 minutes in 2 tablespoons of a spirit of your choice  (I used an apple vodka). Preheat the oven to 200C (390F) and butter a 22 cm (8 inch) round cake tin. Beat 3 eggs with 120g of caster sugar until quite fluffy. Sift 160g of plain white flour with 1 tablespoon of baking powder and fold this in. Next, pour in 140g of melted butter and fold through. Now add the apples and any juice and mix them through before spooning into the prepared cake tin. Bake for 40 minutes until the cake is golden brown. Serve warm or cold.
