chunky apple cake

Here’s a lovely cake chock full of apples.

Peel 5 large apples (I used 3 granny smith and 2 red delicious) and cut into small chunks. Sift together 3 cups of plain flour, 1 generous tablespoon of ground cinnamon and 1 teaspoon each of salt and bicarbonate of soda. In another bowl or electric mixer beat 1½ cups of sugar, 300 ml (10 fl oz) of vegetable oil and 3 large eggs until pale yellow. Add the sifted ingredients, the apples and 1 teaspoon of vanilla and combine. Transfer to a prepared bundt tin, ring tin or 2 small loaf tins and bake at 180C (350F) for 90 minutes or until the cake tests clean. Serve with cream or ice cream.
