This vegetable has always been popular in Germanic countries and is widely used in parts of Asia. Now it seems to be gaining popularity it other parts of the world. A member of the brassica family, kohlrabi tastes like cabbage heart, but is milder and sweeter with a crisp texture similar to apple. This kohlrabi and apple salad is excellent with pork.

Peel a large kohlrabi and 2 apples and cut them into fine strips. Add fresh mint. Make a dressing of sour cream and mayonnaise and season with salt and freshly ground pepper to taste.

Try this refreshing salad with fish or grilled meat.

Peel the kohlrabi and slice finely along with a cucumber and red onion. Add some fresh mint, parsley or dill. For the dressing add some crushed garlic and a little lemon juice to sour cream and season with salt, pepper and sumac.
